Try Renard's Cheese, in Door County Wisconsin (a little family-owned shop with which I am unaffiliated except by admiration for their products.)  Their 2-year sharp white Cheddar and their 3 and 5-year sharp yellows are The Real Deal.  Forget Vermont and NY; these guys have what you want.
