For the Beatles, there's Big Daddy's "Sgt. Pepper's" (their abbreviation) and Laibach's "Let It Be" (which, weirdly enough, doesn't include the title track.)

And my favorite recent one is Petra Haden's a cappela cover of "The Who Sell Out."

But let's not forget that "Meet the Beatles" was the American version of "With the Beatles," with "I Want To Hold Your Hand" added.  And, as I've just been reminded, the album was MOSTLY cover tunes.  Are the Smithereens covering the covers?</description>
